Beef with Potato & Green Chile

This is a favorite in our house, and I love it because it’s easy and I can usually use some prepped foods like beans, or ground beef to make the process even faster!

I’m from New Mexico, so of course I’m going to tell you that nothing will compare to Hatch Green Chile…but if you don’t have access to that or local chile of your own, I like this one and this one.


Ingredients

1lb cooked ground beef with onion

1 cup of green chile

2 potatoes diced

3c beef broth

S+P and a little garlic and onion powder

Bring to boil and then simmer for 15 minutes


Directions

Bring to boil and then simmer for 15 minutes.

Serve with beans, avocado, salsa and tortillas
