Copycat CAVA Bowl

This is one of those meals I made for the first time, and immediately knew it was going to be on our dinner rotation! CAVA is a fave of mine, but they never make my bowl the way I would really like, and this copycat version is waaay tastier and has better ingredients.

You can also make most of this ahead and store for a quick dinner, or make double and meal prep for the week too!

Ingredients

chicken breast

roasted veggies

rice

english cucumber

tomato

black olives

feta

red onion

lemon

hummus

tzatziki

Directions

For the chicken, I get marinated breast from my favorite spot, Elita Market. But you can make your own marinade using this recipe. Whisk ingredients and pour over 1lb of chicken and store in the fridge at least 12 hours prior or freeze in bags for later.

I like to pan fry mine in a cast iron skillet or use the Blackstone griddle. You could also bake it or grill it.

▢1 tablespoon red wine vinegar

▢1 lemon juiced

▢1 teaspoon honey

▢1 teaspoon dried garlic powder

▢2 teaspoons dried oregano

▢½ teaspoon salt or more to taste

▢¼ teaspoon ground paprika

▢¼ teaspoon ground black pepper

▢¼ cup oil

For the vegetables, I used brussels sprouts, bell peppers, broccoli and squash. Toss in oil with salt and pepper, oregano (if you have fresh rosemary and thyme, throw that in there too) and bake on a sheet pan at 425 for 20 minutes, rotating at 10 minutes.

Slice up the cucumber and tomatoes and start making the bowl.

Add lemon and dips on top

Serve with a warm pita
