Patriotic Fruit Skewers

Summer is in full swing around here…despite the temp being 65 yesterday….that’s Colorado for ya!
It’s looking like another warm 4th of July though, so I’m getting ideas ready for our cook-out. I love combining watermelon and blueberries, they compliment each other so well!
These are so simple to make, cute and patriotic and kid friendly!
Ingredients:
½ medium watermelon (with seeds, if you can find them!)
1 cup blueberries
Instructions:
Cut your watermelon into ½ – inch slices. Using a star-shaped cookie cutter, cut stars from the watermelon slices.
Thread your blueberries, and top the skewer with the watermelon star as shown. Makes about 10 skewers.
Now…if you wanna get a lil’ crazy, you can totally make these adult friendly by soaking your watermelon!
You just need…
1 cup water
1 cup granulated sugar
1 lemon, peels cut off in long strips and juiced
4 star anise pods, slightly crushed
1 medium watermelon
3 ounces tequila
Step 1
In a small saucepan over medium high heat, whisk together 1 cup water and 1 cup granulated sugar. Add lemon peels, juice, and star anise pods. Bring mixture to a boil, then stir until all the sugar is dissolved. Take the syrup off the heat and set aside to cool.
Step 2
Cut your stars (or slices) Arrange in a baking dish
Step 3
Strain the syrup through a fine mesh sieve, then stir in tequila. Pour syrup over the watermelon wedges, then place in the fridge for at least 1 hour, but up to 12 for sharper flavor. Serve with a sprinkle of flaky sea salt.
